Spoiled frying oil in 8.5 percent of food businesses

Spoiled frying oil was found in 8.5 percent of the food businesses examined. Over a quarter lacked regulations on the correct handling of frying oil. Snack bars, takeaways and food trucks had the highest complaint rate.

The unsatisfactory oil quality at 104 food companies (8.5 percent) is not satisfactory, as the quality of the oil is quite easy to check, wrote the Association of Cantonal Chemists of Switzerland (VKCS) in a press release on Wednesday.

According to the VKCS, the highest proportion of poor-quality frying oil was found in the snack bars, takeaways and food trucks category at 12.7%. This category of business also scored worst in terms of the lack of regulations for handling frying oil. Two fifths lacked such regulations.

According to the press release, the frying oil was in order in all 97 establishments examined in the staff restaurants, canteens, hospitals and care homes category, as well as in the bakeries category.

As part of the VKCS campaign, 1223 deep-fat fryers from food businesses in Switzerland were inspected.
