Groupe Minoteries sets to revive traditional milling in Riddes, Valais, crafting flour for Valais AOP rye bread and local treats, with a planned opening in summer 2025.

Groupe Minoteries (GMSA) embarks on a journey back in time with its latest venture, a traditional mill in Riddes, Lower Valais. This new facility will specialize in producing flour for the esteemed Valais AOP rye bread and other regional specialties. According to a recent press release, the mill is set to begin operations in the summer of 2025, heralding a new era for traditional baking in the region.

The mill’s standout feature is its nod to heritage milling techniques. Eschewing modern metal rollers, the facility will utilize multiple millstones for several grinding passes. This methodical, slow milling process preserves the grain’s integrity and enhances the flour’s texture and nutrient distribution, promising a superior baking ingredient for local delicacies.

However, this advancement comes with a change in GMSA’s operational landscape. The company plans to shutter its Naters VS mill, one of its five current production sites, in the latter half of 2024. This decision aligns with the strategic shift towards the Riddes facility, promising a seamless transition with an interim solution until the new mill’s inauguration. Details regarding the financial aspects of this project remain undisclosed in the press release.

As GMSA prepares to blend tradition with innovation at its Riddes mill, the local culinary scene stands on the cusp of a renaissance, eagerly awaiting the revival of cherished regional bread and specialties.
